Quick Sauteed Potatoes

I am writing this while cooking :) its not Jamie Oliver friday yet but I’m in the kitchen doing a quick meal!

Salmon with a lemon and butter sauce, but what to have with it?

I fancy some sauteed potatoes mmmm! So easy to cook!

What do you need?

  • Potatoes
  • Olive Oil or Sun Flower Oil
  • Mixed Herbs (Optional)

Cut your spuds into small chunks then stick them in a pan of boiling water for 4 mins, some people say 3 but I’m putting my 4 mins out there!
Then take them off the heat, drain them and let them cool.
When you want to serve chuck them in a hot frying pan with the oil (and herbs) and leave to brown a bit before turning them, then turn them about 2 or 3 times fr about 7 mins!

Asparagus and Potato Tart

I really love asparagus so really wanted to use it again in tonight’s meal, I looked through Jamie’s vegetarian recipes until I stumbled across this one.

Very tasty! I had to leave it in the oven alot longer than suggested but apart from that perfect!

• 500g potatoes, peeled and cut into chunks
• sea salt and freshly ground black pepper
• 500g asparagus spears, woody ends removed
• 200g filo pastry
• 100g butter, melted
• 100g freshly grated Lancashire cheese
• 100g freshly grated Cheddar cheese
• 3 large organic or free-range eggs
• 1 x 284ml pot of double cream
• ¼ of a nutmeg

Fiery Dan Dan Noodles

I saw this one on Jamie Olivers new America TV show and just had to try it!
It was very good! I did struggle to find the exact right veg in Sainsbury’s but got some pretty good equivalents in the ready mixed stir fry bags.
  • 1 beef or chicken stock cube, preferably organic
  • 500g minced beef
  • 2 tbsp runny honey
  • 300g wheat noodles
  • 4 handfuls of mixed green veg (chinese cabbage, sprouting broccoli, bok choy, spinach)
  • 4 cloves of garlic, peeled and finely chopped
  • 3 tbsp dark soy sauce
  • 2 tsp freshly ground Sichuan pepper
  • 5 tbsp good-quality chilli oil (see PS below)
  • 2 spring onions, trimmed and finely sliced
  • 1 lime, quartered, to serve
